Banana Bread

Another one of my ALL-TIME favorites! Got some brown bananas? Don't you dare throw them away! This is a super simple recipe that takes hardly no time at all, but its so worth it! So try this out! :)


Ingredients
  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teas. vanilla
  • 1 teas. baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
  • 1/2 cup chocolate chips (optional) 
Preheat oven to 350 degrees F.

Mash ripe bananas with a potato masher.  Mix butter into the mashed bananas in a large mixing bowl.  Add in the sugar, egg, and vanilla and mix.  Add the flour, baking soda, salt, and chocolate last and mix well.

Pour mixture into a buttered 4 x 8 inch loaf pan.  Bake for 1 hour. Cool on rack.  

Also great as muffins, just cook about 30-35 minutes or until golden brown.

Grandma's Stuffed Sweet Meatballs

What better way to start out my blog then with a classic family recipe?  This recipe comes from my Grandma Ramona. She passed it on to my mom and it has always been one of my favorites!

(I'm not a food-ographer or whatever so I suggest you try out the recipe before you draw too many conclusions, its delicious!)


Mix 2lbs. of hamburger and 1 small can of condensed milk.

Prepare 1 package of Stove Top Stuffing Mix as directed.


Wet hands! (super important, the meat is way sticky so I'd just keep a little cup of water next to you and always keep your hands wet so the meat doesn't pull apart) Take large spoonful of hamburger, roll in ball, flatten and put 1 T of stuffing and wrap hamburger around stuffing.  Place in 9 x 13 pan.




Heat 2 cans of Golden Mushroom soup with 4 T ketchup and 4 T Worcestershire sauce.

Pour sauce over meatballs and bake 1 hour at 350 degrees.
Be generous with the sauce, I make sure to cover every inch of it. I like sauce :)
This should yield about 12 hearty meatballs.

Well Hello!
My name is Lexi, and I am creating this blog for my college class. First thing you need to know is that
1. I LOVE FOOD.
Food is literally my life. (Not just becuase you need to eat it to survive, but because I love to make my own interpretations of everything around me.)
2. Food is fun!
Think about it, you can make anything out of food, and you can make anything WITH food.
3. Food is a stress reliever. When I'm feeling overwhelmed, or there's lots of things that I don't want to do, I cook.  I find new recipes and try them out, it's my own type of therapy.

So here's my thought.  I'm going to post some of my favorite recipes, that either I have tasted or I have made.  And then once a week I will make something new! Or if I get suggestions to make one of the recipes already posted I'll do that! Feel free to give me advice or suggestions, and also ask questions. I'll try to provide detailed descriptions and pictures of everything that I do, but I'm always open to suggestions, and I've learned that random people have random helpful ideas. So basically, we're all in this together!
